Description: The kumquat (KUHM-kwaht) is a small, bright, orange, citrus fruit. It ranges in shape from oblong to round. Very ripe fruit can be sliced and served raw in salads or as a garnish.
Kumquats are often cooked, candied or pickled whole in preserves or marmalades.
Kumquats are an excellent source of potassium and vitamins A and C.
Taste: The edible golden orange rind is sweet, while the rather dry flesh is very tart. Comparable to an orange with a hint of tangerine
Selection: Fruit is best when firm, bright in color and unblemished.
Ripening: Not necessary except when cooking.
Shelf Life: Kumquats store well in the refrigerator for two weeks. Fruit kept at room temperature should be used within three to four days.
